CORIANDER SEEDS SPICE
Coriander is a dried seeds of cilantro. Cilantro is very popular greenery in Mexican cuisine, so coriander is also used frequently.
The seeds have a lemony citrus flavour when crushed, due to the presence of the terpenes linalool and pinene. It is also described as warm, nutty, spicy, and orange flavoured. They are usually dried but can be eaten green.
Coriander seeds are great with apples, beans and pulse, chicken, citrus fruit, ham, mushrooms, onions, plums, pork, potatoes.
