Peppercorns are considered to be a fruit with very thin skin and a single large seed that comes from the same vine, despite their color. Green peppercorns are mild in flavor and are harvested during the younger stages. Black pepper comes from the seeds that were left to ripen - while maturing they develop a stronger flavor. White peppercorns are black peppercorns that have been soaked to remove the outer casing. This process gives the spice an intense and fermented flavor. Peppercorn vines are native to India but now are grown in nearly every tropical region. Pepper is considered the most traded spice in the world. This spice gets it’s bite from a chemical that can break down when exposed to heat, air, and light so we recommend using freshly ground pepper, store it away from direct sunlight, and use it close to the manufacturing date.
