THE HISTORY OF THE MOLCAJETE GOES BACK SEVERAL THOUSAND YEARS, USED BY PRE-HISPANIC MESOAMERICAN CULTURES, INCLUDING THE AZTEC AND MAYA.
THE MOLCAJETE IS USED TO CRUSH AND GRIND SPICES AS WELL AS PREPARING GUACAMOLE AND SALSA.
ITS TEXTURE PROVIDES THE IDEAL GRINDING SURFACE AND THE WEIGHT OF THE PESTLE MAKES IT PERFECT FOR CRUSHING SEASONINGS.
IN ADDITION, CRUSHING CERTAIN VEGETABLES AND SPICES IN MOLCAJETE RELEASES MORE ENZYMES AND AROMATIC OILS, THAN WHILE USING A KNIFE.
MOLCAJETE CAN BE ALSO USED AS A DECORATIVE DISH FOR ANY SAUCES OR DIPS. IT ALSO STAYS HOT FOR A LONG TIME THANKS TO ITS HIGH THERMAL MASS.
TIPS FOR STARTING: THE NEW MOLCAJETE NEEDS TO BE “BROKEN” - DUE TO ITS VOLCANIC NATURE, SOME SMALL GRAINS OF BASALT NEED TO BE CLEARED FROM THE SURFACE. TO REMOVE THEM SIMPLY GRIND UNCOOKED WHITE RICE. YOU WILL SEE DARK GRAIN APPEARING SO KEEP CHANGING AND GRINDING JUST ¼ OF RICE EACH TURN UNTIL YOU WON'T SEE ANY BASALT IN THE RICE FLOUR.
